Tahini quinoa salad
Published on
A simple salad made from ingredients you probably already have in your kitchen cupboard. As well as tasting great, this recipe contains plenty of protein and digests slowly thanks to its high fiber content.
Tahini is an oily sauce made from sesame seeds. Be aware that on its own, it has quite a sharp, almost mustard-like taste.
Instructions
- Cook the quinoa according to the package instructions, or for 4 minutes on high in a pressure cooker (release the pressure immediately).
- Rinse the chickpeas.
- Divide the quinoa, chickpeas, cherry tomatoes and arugula between two servings or two containers.
- Make the dressing by combining a tablespoon of tahini with some apple cider vinegar, then add water to reach your preferred consistency. Stir well with a fork.
- Divide the dressing between the servings and enjoy.
