Chickpea and ground beef chili
Published on
A quick, protein-rich meal with very little preparation. Combining lean ground beef, chickpeas and a ready-made lentil or chili sauce gives you a hearty meal in under 10 minutes. Ideal for busy days or for making in large batches for meal prep.
Instructions
- Brown the ground beef in a pan or in the Instant Pot, breaking it up as it cooks.
- Rinse the chickpeas under cold water and drain well.
- Add the chickpeas and the pouch of sauce to the beef.
- Stir everything together and heat until piping hot.
- If you like, simmer gently for a few more minutes to let the flavors combine.
Ingredients
For 4 servings, you’ll need:
- 500 g lean ground beef
- 800 g chickpeas (480 g drained; tip: buy a large can)
- 1 pouch of HAK Lentil Curry or HAK Chili Sin Carne
Tips
- Perfect for meal prep. Make 8 servings at once and you’ll have two meals a week in the freezer for a whole month.
- Vegetarian mince or extra lentils also work well in place of the meat.
- Add extra vegetables if you like, such as spinach, bell pepper or zucchini.
- Serve with rice, quinoa or a wholegrain wrap if you want a larger meal.
- For more protein, add an extra can of lentils or beans.
